What could be more perfect than starting your day with a burst of flavor and energy by whipping up a delightful sunny-side-up egg on a tortilla? This simple yet scrumptious breakfast dish combines the creamy richness of a perfectly cooked egg with the comforting, slightly crispy texture of a warm tortilla and a few veggies.

The combination of eggs, vegetables, and cheese on a warm tortilla creates a dish that's not only delicious but also versatile and easily customizable. I am a breakfast person and this recipe was inspired by my homemade flatbread recipe which I sometimes make for breakfast, quail eggs, mushrooms and bacon breakfast and it pairs well with this sour cream sauce why not add this omelet to it if a sunny-side-up egg isn't your thing?

🥘 Ingredients

There are not many ingredients that I have used in this egg tortilla. My kids love it and I do too because it's easy to make and it delivers every time.

Ingredients needed for egg and tortilla, fresh parsley, red onion, red Chili, eggs, scallions, salt and pepper, cheese, mushroom, tortillas.

All you will need for this recipe is:

  • white or wholemeal tortillas 1 or 2 per person depending on how hungry you are
  • eggs (use good quality eggs for the best flavors)
  • cheese - this has to be grated or crumbed for the best results
  • fresh herbs ( I used parsley finely chopped)
  • red onion - unmissable
  • scallions or spring onion - also known as green onion
  • mushrooms - I used cremini mushrooms or chestnut as we call it over here
  • red pepper - really good to use for extra flavor
  • red chili - this is optional as spicy isn't everybody's cup of tea
  • Salt and Pepper

👩🏽‍🍳 How to make an egg tortilla

Here is how to make these breakfast tortillas with fried eggs.

Step 1

  • gather and prepare the ingredients - gather, wash, chop, and set aside all the ingredients that you will need.

Step 2

  • Sauté the scallions, or spring onion and the red pepper if you wish.
  • Meanwhile, cook the mushroom slices and the eggs separately.

Cook the washed and sliced mushroom(s). I add a little olive oil and a pinch of salt. Remove on a separate plate.

In the same pan, add a drizzle of olive oil the scallions, sautee for a minute or two, and then cook the eggs to perfection.

Step 3.

  • add the tortilla to the pan over the sauteed vegetables, press and flip over, and add the mushroom slices, and a generous pinch of the grated cheese.

Step 4.

  • assemble the Tortillas - place the eggs on the tortilla. Carefully slide the cooked eggs onto the prepared tortillas.
  • season, garnish, serve, and enjoy. Your sunny-side-up egg on a tortilla is ready to be devoured.

The warmth of the tortilla, the richness of the egg, and the medley of sautéed vegetables make for a fantastic breakfast experience.

Place one tortilla in the pan, and add finely chopped pepper, red chili, mushrooms, and cheese. Cook covered for 2-3 minutes

Place on a serving plate, add the egg, some red onion slices, fresh herbs, and red chili if desired. It is ready to serve.

Hint!

If you do not like a soft egg, feel free to add the egg to the tortilla cook covered for 2 minutes, and then flip the tortilla over to cook your egg to the desired consistency.

🍽️ What to serve it with

Any salad, pickle, oh my, I am now thinking of this pickled watermelon or a nice raw sauerkraut with turmeric. Healthy stuff to die for. Yes, to die for because I am such a picklehead! There is no way I would have a dish like this without pickles. anything! Dill cucumbers, pickled onions, green tomatoes, carrots, beets - anything!

🤹🏻Variations

Feel free to personalize your sunny-side-up egg on tortilla with additional ingredients such as avocado slices, chopped cilantro, hot sauce, or salsa. You can also choose whole wheat or spinach tortillas for a healthier twist, or add a drizzle of sour cream sauce or a sprinkle of chopped fresh herbs for extra flavor.

  • Spicy - add chili flakes or red chili pepper while cooking or as a topper to bring some heat into the dish.
  • Deluxe - add guacamole, hummus, feta cheese crumbs, ham, or some crispy or caramelized onions for something absolutely magnificent.
  • Kids-friendly - add some potato chips to the side and even a drizzle of ketchup!
  • Vegan - substitute the egg with tofu or some vegan cheese.
Variation to tortilla and egg with ham added as a topping being served on a white plate.

📦 Storage

You may slightly wrap those for a picnic or for later, place them in an airtight container, and refrigerate for up to 2-3 days.

Thinking of freezing them? Eeerrr, no I would not. Yes, freeze the tortillas and pan heat them thoroughly when needed to make it, and freshly fry the eggs.

⬆️ Top tip

The reason I do not cook the egg directly on the tortilla is that the tortilla will dry too much by the time the egg is done. I do sometimes when I fancy a crispy tortilla which I definitely do sometimes.

❓FAQs

Is egg on tortilla the same as breakfast quesadilla?

Both egg on a tortilla and a breakfast quesadilla involve eggs and tortillas but there are some differences between the two. An egg on a tortilla is a lot simpler to prepare where eggs are cooked (fried, scrambled, etc.) and then placed on top of a tortilla with all the desired toppings or seasonings.
A breakfast quesadilla typically involves folding the tortilla over the ingredients, looking more like a sandwich. The ingredients are usually enclosed within the tortilla and then cooked until the cheese is melted and the tortilla is crispy.

How can I make this with fewer carbs?

Simply substitute the tortilla with a low-carb option that you can readily buy or attempt making yourself. Here's a recipe for a low-carb tortilla.

Can I use corn tortillas instead of flour tortillas?

Yes, you can absolutely use corn tortillas if you prefer or have them on hand. The cooking times may vary slightly, so keep an eye on them to avoid overcooking.

Can I use pre-shredded cheese?


Yes, pre-shredded cheese works well in this recipe but for the best melting quality and experience, you may shred your favorite cheese just before using it.

Can I make this recipe vegan?

Oh, absolutely! Simply omit the eggs or substitute them with a plant-based alternative. Load up on your favorite veggies, add way more mushrooms, or even use different types of mushrooms like king oyster, oyster mushrooms, or shiitake.

Can I make this recipe ahead of time?

As much as I would love to say, oh yes, no problem, tortillas are still best enjoyed fresh, you can prepare the sautéed vegetables in advance. Cook the eggs just before serving for the best texture and flavor.

Egg on tortilla makes a great start to any day, it is fun to make, delicious to have, and packed with goodness.

Equipment

  • 2 pans
  • 1 spatula
  • 1 knife
  • 1 chopping board

Ingredients

  • 4 tortillas gluten free if required
  • 4 medium eggs organic
  • 100 g grated cheese (3.5 oz)
  • ½ medium red pepper
  • 2 medium spring onion /scallion
  • 1 small red onion
  • 2 tablespoons fresh parsley finely chopped
  • 4 small mushrooms or 1 extra large Portobello mushroom
  • ¼ small red chili optional
  • 1 pinch salt
  • ⅐ teaspoon black pepper
  • 1 tablespoon olive oil
Metric - US Imperial

Instructions

  • Prepare all the ingredients by gathering them, washing, chopping. Set aside.
  • Place a pan on medium fire with a little drizzle of olive oil, add the sliced mushrooms, and cook on each side for 2 minutes. When ready, take them out on a plate and set aside.
  • In the same heated pan, add the chopped scallion, and cook for 2 minutes tossing occasionally. Add the eggs gently and cook to perfection.
  • In a different pan, placed on medium fire, place one tortilla, add the red peppers finely diced or shredded. Cook covered for 2 minutes, add the shredded cheese and cook for a little longer or until the cheese has melted.
  • Add some mushroom slices and an egg to the tortilla, season well, garnish with some red onion rings, fresh parsley, and chili flakes or red chili, transfer it to a plate, and serve. Enjoy!

Notes

If you like your peppers to be thoroughly cooked and soft, add these to the scallions and cook together. I like the peppers crispy. 
Add some ham if you wish to add some extra protein.
If you want to make this for 4 people, you may try and make it simultaneously (once the veg and the eggs are done) in 4 pans. For more than 4 people, I suggest using a pan sheet and placing all the tortillas in the oven.
