Healthy Chicken breast recipe with giant couscous, pesto sauce and radicchio
This quick chicken salad is a life saviour, quick to make and requires just a few ingredients like chicken breast, pesto suace, radicchio and peppers .
Cook the couscous by following package instructions. Mine cooked in 7 minutes.
Meanwhile, take out a larger bowl, add the shredded chicken breast, chop the red onion, spring onion, radicchio and the peppers.
Add the cooked giant couscous and the pesto sauce and give it a good old mix. Serve warm or cold. As simple and as quick as this!
Notes
yummm... Chicken can be replaced by tuna, shredded beef or some good shredded ham hock. I have tried all of them so give it a go, feel adventurous ;-) .
