A healthy sugar-free banana bread made with wholesome ingredients (NO refined sugar, NO flour, and NO butter!) that makes a delicious breakfast or anytime snack!
2tablespoonsmixed seeds(I used pumpkin and sunflower)
1tablespooncinnamon powder
⅙teaspoonCeltic salt a pinch
Instructions
Gather all the ingredients, grease one or two tins or line with parchment paper and preheat the oven at 180℃ /350℉.
In a larger bowl, mush the bananas with the help of a fork.
Add the eggs eggs on top of the bananas and beat well until homogenised.
Add the pumpkin and sunflower seeds, desiccated coconut, flax, chia seeds, salt, chocolate chips, cinnamon, dates sugar and the almond flakes. Mix well.
In a pan, toast the chopped walnuts and add to the batter along with the 150 grams of barley flakes. Mixx until everything is well incorporated.
Pour the batter in the tins or ramekins, add some banana slices over and place in the oven. Bake for 30-35 minutes until nice and brown.
Once ready, take out of the oven, leave to cool for 5 min and after take all out and place on a cooling rack. Serve as desired or allow to cool completely before storing them for later.
Notes
Sweetness - Add more sweetener if you wish this to be sweeter, this is perfectly sweet for my taste buds and liking. It is very moreish but not the sweetest I admit.
Cooking time - this will vary depending on the tin size or if just using ramekins in which case the cooking time will drop to 20 minutes or so.
