Prepare all the ingredients by gathering them, washing, chopping. Set aside.
Place a pan on medium fire with a little drizzle of olive oil, add the sliced mushrooms, and cook on each side for 2 minutes. When ready, take them out on a plate and set aside.
In the same heated pan, add the chopped scallion, and cook for 2 minutes tossing occasionally. Add the eggs gently and cook to perfection.
In a different pan, placed on medium fire, place one tortilla, add the red peppers finely diced or shredded. Cook covered for 2 minutes, add the shredded cheese and cook for a little longer or until the cheese has melted.
Add some mushroom slices and an egg to the tortilla, season well, garnish with some red onion rings, fresh parsley, and chili flakes or red chili, transfer it to a plate, and serve. Enjoy!
Notes
If you like your peppers to be thoroughly cooked and soft, add these to the scallions and cook together. I like the peppers crispy. Add some ham if you wish to add some extra protein.If you want to make this for 4 people, you may try and make it simultaneously (once the veg and the eggs are done) in 4 pans. For more than 4 people, I suggest using a pan sheet and placing all the tortillas in the oven.
