
A real tip here for extra quickness: I sometimes pre-cook the apples and, at times, I prepare more of, sometimes even 1.5-2 kg of apples. I cook them for a few minutes (20 or so) with the sugar, allow to cool and then freeze it in parcels, good portions to use later on. I use those also to purée, for pancakes or whenever I need a good apple sauce. So, when you fancy an apple cake like this, all you need to do is to remove the previously prepared apples from the freezer approx 1h prior to cooking and it's all good to go.
