Winter season is here with milder or really cold days. Rain was annoyingly abundant and all I want to have it’s comfort food. Soups, casseroles, stews and desserts like this apple tart it’s all I need and crave for. I am pretty sure you feel the same especially if cold winter is showing its teeth at your end too.
This apple and orange marmalade tart with rosemary and chia seeds for me it’s the taste of winter holidays, apple, orange it’s all about festive time. A true reminder that Christmas is approaching.
All these seasonal ingredients and some even locally produced is great. Those that know me pretty well, know I’m an advocate for organic and sustainable food as much as possible.
It’s great to be able to source nice produce and to support local farmers at the same time, the unsung heroes who work so hard and are so devoted to giving us great food and ingredients for our daily meals.
I’ve made this tart a few times before and I have combined various ingredients but for me this was it! I love the sweet, slightly bitter, tangy taste. It is wow for my palette and my taste buds are jumping up and down with joy whenever I make this version.
You can make your own (I’ve made this with ready bought puff pastry but this tarte goes well with almost any kind of sweet pastry. Here is a recipe for a great homemade pastry, if you want to give it a go. It is pretty simple, it will only add an extra half of hour to making this tart.
I do buy the puff pastry as I do love it and it’s pretty labourious to make it at home so not worth spending the time when you can buy it.
I know it’s not the same but, like for most of us, time is precious and never sufficient. Especially when you are a full time mum with young children.
I’ve used organic apples , rosemary from my own garden, homemade orange marmalade for which I will need to give you my delicious recipe.
This apple and orange marmalade tart it’s a little sweet, a touch tangy, slightly bitter from the orange marmalade and beautifully aromatic.
It has different textures too, so, if like myself, you are a texture person you will enjoy this even more. Just imagine the crispy pastry edges, walnuts, chia seeds, baked apples, from smooth to crunchy, it is all in here.
Homemade jam and preserves vs supermarket ones….
Well, talking about jam and marmalade here, I always thrive do make my own. They are super delicious, have no nasty additives of any kind, moreover, they contain less and better quality sugar. I only add a quarter of the sugar the market ones contain.
Homemade jam does have a shorter life ( depending on the sugar amount added though) but a jar or two can last a good 2-3 months refrigerated which is perfect.
It makes perfect sense to me to make own preserves as I always make it in the quantities that I want and need.
I’m sure you agree here especially if you are in favour for homemade everything as much as I am. So,if you don’t make your own but you love consuming jam this is definitely something you might consider doing.
We do go through quite a bit of it throughout the year. Nice seasonal jam, wow, not much to compare with.
I’ll put some jam recipes up, I promise. I said I need to do this for quite some time but never got to. It will happen, stay tuned it’s now closer than ever.
Just to enumerate a few fruits I make Jams and preserves from:
• strawberries •raspberries •mixed berries •quince (my favourite) •kumquats •walnuts •orange •cherries •sour cherries (my favourite one for pancakes) •pears •kiwi •gooseberries and few more.

Meanwhile, let’s get this apple tart baked and ready to tuck in. We’re just minutes away as this only takes a jiffy to put together.
Apple and orange marmalade tart with rosemary and chia seeds
- oven proof tin
- baking beans
- parchment paper
- apple corer
- 1 pack Puff pastry ready rolled
- 2-3 apples peeled cored and cut into circles
- 1 handful Walnuts
- 2-3 tbsp orange marmalade *
- 2 tbsp gin
- 1 tbsp brown sugar
- 2 tbsp chia seeds optional
- 2 tbsp almond flakes optional
- 1 tsp fresh thyme 2 small young sprigs (finely chopped) *
- 1 tsp rosemary 4-5 needles/leaves finely chopped
- 1 tbsp icing sugar to dust at the end
- Take the puff pastry out of the fridge 10-15 minutes before working with it.
- Get the tin prepared by lining with parchment paper and preheat the oven at 180°C/ 350°F.
- Place the pastry in the tray pushing down slightly to mould it around the tin nicely.
- Place another parchment sheet over the pastry pushing down around all corners. Put the baking beans over the parchment and spread them around equally pushing them gently down.
- Bake the pastry for 8-10 min until the edges begin to get slightly golden.
- Meanwhile peel and core two (large) or three (medium) apples and cut into rings. Place them in a bowl, sprinkle the sugar, drizzle the gin, give it a toss and set aside. *
- Wash and chop the rosemary and the thyme, set aside to use shortly.
- When the pastry is ready take out of the oven, remove the parchment and the baking beans and allow it to cool for appropriately 5 minutes.
- Using a brush, coat the pastry with the orange marmalade, sprinkle the chia seeds (if choosing to use) the herbs scattered around, arrange the apple rings at an angle, scatter the walnuts and almond flake around and place in the preheated oven. Bake at 185C for 20-25 minutes until golden brown.
- When ready, dust with icing sugar and serve. This can be served with Greek yogurt, ice cream or clotted cream. Delicious!
