Here are the few steps to follow to make this easy, gluten-free, and carb-free cucumber and salmon rolls recipe:
- Step 1: Gather and prepare all the ingredients. Shred the scallions and the red onion, and slice the avocado.
- Step 2: With a vegetable peeler, slice the cucumber super thin, into long strips.
- Step 3: Layer the cucumber slices on cling film, slightly overlapping them to form one thin layer.
- Step 4: spread the cream cheese, scatter the red onion, sesame seeds, and add the avocado.
5. Step 5: Add one thin layer of smoked salmon over the avocado.
6. Step 6: Roll the cucumber by holding it tight for a nice cucumber roll.
Hint:

These cucumber and salmon rolls can be kept out on the counter for 2 to 3 hours without any issues, so they are ideal for parties too. I assure you, they will not last anywhere near that long before they all disappear. When I say they do last 2-3 hours, that is not if it is very, very hot. Remember they contain fish (although smoked) and cheese, which will begin to melt if too hot.
If your place is hot, keep them refrigerated and take them out in small batches.

- 1 large cucumber English cucumber
- 100 grams smoked salmon (3.5 oz)
- 3 tablespoons cream cheese I used classic Philadelphia
- 1 medium avocado perfectly ripe
- 2-3 medium spring onions / scallions
- 2 tablespoons mixed sesame seeds
- 1 small red onion
Instructions
Prepare the Cucumber Sheets:
- Using a vegetable y-peeler or mandoline, slice the cucumbers lengthwise into thin, wide strips. These will serve as the "wrap" for your sushi-style cucumber rolls.
Prepare the Filling:
- Wash, chop or shred the scallions/spring onions, red onion, avocado, and break the smoked salmon into smaller pieces or shreds.
Assemble the rolls
- Arrange the cucumber strips slightly overlapping. Spread a thin layer of the cream cheese mixture over the cucumber layer. Sprinkle a generous amount of mixed sesame seeds and the shredded spring onion/scallions.
- Towards the end (closest to you), layer the other ingredients in one neat line - see the pictures above for more clarity.
- Using a sushi mat or a cling film sheet, carefully roll the cucumber sheet tightly over the fillings, applying gentle pressure to form a firm roll.
- Once fully rolled, slice the roll into bite-sized pieces using a sharp knife.
Serve:
- Place in the fridge until ready to serve, and only take out before serving, especially if it's warm, and if you have used sushi-grade fresh/raw fish.
- Serve on a platter as they come or with a sauce/dip of your choice.
