This blue cheese, walnut and date syrup boats is such a must-try recipe, a perfect combination and marriage of ingredients.

I have made this over the Christmas period and my mum tried it too. She was very intrigued by the combo and she noted down the recipe, saying she'll prepare the 'boats' again, for my dad as well pretty soon when she reaches home. This must be good then.

Truthfully, you eat those and your whole mouth will be so overwhelmed with joy. It's all very tasty and equally healthy.

This can be a beautiful appetizer, snack or a nice, fine start to any meal.

It is impressive, it's all I could say for both eyes and taste buds.
The beauty of this is that it's ready in a flash and all you will need is 4 ingredients.

This simple recipe contains just a few ingredients like walnuts, blue cheese, endives and date syrup and it can be an absolute saviour when entertaining.

Ingredients

  • 2 endives (chicory)
  • 100 g walnuts
  • 100 g blue cheese (soft)
  • 3-4 tbsp date syrup
  • 2 tbsp sunflower seeds (optional, toasted)

Instructions

  • Wash the endives and shake off the water.
  • Remove each leaf and place on a serving plate.
  • On each leaf place two pieces of walnut and two crumbs of cheese.
  • When finished all to arrange, drizzle carefully the dates syrup making sure each leaf gets a fair share.
  • Optionally finish off with a sprinkle of toasted sunflower seeds.
  • It's as simple as this. No fuss. ??

Notes

I normally use either a beautiful creamy blue cheese or a Stilton. Use any good quality blue cheese.
Most of the time I do toast the walnuts for that extra taste and flavour but raw ones will do beautifully. Try both and see which one you prefer better.
If you don’t happen to have dates syrup you can equally use a good old honey, maple or agave syrup as well as coconut nectar. A homemade runny fruit jam would suffice too!
Endives... oh... lovely, healthy and yummy in my tummy ;-))

    These little boats sound so delicious. I think I might want my walnuts toasted, but if they're good ones, untoasted would be good too.

    I love this! Such a wonderful and easy to prepare little appetizer. We loved the creaminess of the blue cheese coupled with the crunch of the endive and the walnuts. I did toast the walnuts. I think it made a huge difference.

    Perfectly combined ingredients, great on an endive leaves. They are an excellent base for other dishes too, a very successful idea. I did not find the date syrup, but I used the maple syrup as you suggested, it was super.
