Quick 'N' Yummy Apple Strudel

For me, festive season means as many apple desserts as I possibly can fit in...

This apple strudel (or apple roulade), pie - call it however you wish - it's a true delish.

I find apple desserts so good that I can't really and fully explain or express -well, in fact, it's simple, - I am actually addicted! ? and properly hooked to those and If I am to blame anyone, that'd be my own mother and grandmothers for preparing such great apple desserts; they were making such amazing apple desserts which I always loved and enjoyed eating as a kid, teen or even later in life, I mean... even now.

Unfortunately, I have no more grannies to spoil me but fortunately, my mother still makes the best apple cake ever, so whenever she comes over to me (not as often as I'd like, for sure) or whenever I go back home, I get really spoiled.

I still believe that my mum's cooking and baking is best but, don't we all?❤️

I still remember those days as a kid when my grannies were making this roulade which was giving us such a joyful lift to our whole happy existence when the entire house was smelling of apple and cinnamon desserts. Any apple dessert, mmmm, I still dearly love and I remained very addicted to and probably will be for the rest of my life.

I have decided to make this apple strudel with a ready-made puff pastry, as I wanted it quick, and I have also decided to add a few more ingredients to it, as it had to be more Christmassy,??❄️ so I've added some dry cranberries, sultanas and nuts.

I can only say I enjoy it so much that I could have it all day every day and I'm sure you've already figured that out.

Quick 'n' yummy apple strudel

This apple strudel delightful recipe is a yummy and inexpensive dessert made with puff pastry, organic apples, cinnamon. Simply delicious.

Ingredients

  • 1 kg apples
  • 1 pack puff pastry ready rolled
  • 120-140 g cane sugar
  • ¼ teaspoon salt
  • 1 teaspoon cinnamon
  • 80 g sultanas
  • 80 g cranberries (dry)
  • 1 teaspoon rum essence (optional)
  • 1 tablespoon poppy seeds (to sprinkle)
  • 2 tablespoon sunflower seeds (to sprinkle)
  • 1 tablespoon icing sugar (for dusting)

Instructions

  • Wash, core and chop the apples into little chunks.
  • Place those in a deep pan over low heat.
  • Add sugar and the cinnamon and cook for 10-12 min on low heat. You may drizzle a couple of tablespoon water to get it started. Cook the apples until these become slightly mushy. Set aside once finished and allow them to cool.
  • Take the pastry out of the fridge for at least 10-15 min before working with it. When the apples have completely cooled, preheat the oven at 180C/350F. Prepare a tray by greasing it with some butter or oil spray or placing a sheet of parchment paper.
  • Work on either on a floured surface or simply on the paper that comes with the pastry. 
  • Spread the cooked apple evenly over the whole of the pastry sheet surface leaving a ½ cm gap all around the edges.
  • Sprinkle some dry cranberries and toasted nuts (any nut you like) even a couple of tablespoon of cane sugar if you'd like it slightly sweeter.
  • Roll nicely n' carefully and place the strudel on the greased tray.
  • Sprinkle some poppy and sunflower seeds over it and give it a little agave/maple or dates syrup drizzle.
  • Bake at 180 C for 40-45 min depending on your oven. Just keep an eye on it and 
  • Take out of the oven and allow it to cool for 10-20 min before serving. Dust with icing sugar.

Notes

Buy the ready-rolled puffed pastry. Keep this refrigerated up until using it. It only needs to be out of fridge 2 min before rolling. The cooler the better and the easier to handle it. I always use organic apples and most times I don't even remove the skin, but only wash thoroughly and remove the core. A close-up of an apple strudel roulade. A real tip here for extra quickness: I sometimes pre-cook the apples and, at times, I prepare more of, sometimes even 1.5-2 kg of apples. I cook them for a few minutes (20 or so) with the sugar, allow to cool and then freeze it in parcels, good portions to use later on. I use those also to purée, for pancakes or whenever I need a good apple sauce. So, when you fancy an apple cake like this, all you need to do is to remove the previously prepared apples from the freezer approx 1h prior to cooking and it's all good to go. Serve with some double cream, creme fraiche or clotted cream! Superb Enjoy! Don't forget to give it like if you liked this recipe or even share with someone you think may like it too.
