There are just a few ingredients that you will need to make this beautiful, rich, silky, mouth-watering cherry tomato soup. Here is what you need:

- Celtic salt

It is a very customizable and versatile soup and here are some ideas:
💞Variations and Substitutions
- tomato paste - I did add some - this is included in the pictures of the steps but not on the ingredients shot as it is an optional
- carrot - feel free to add a carrot or even two for extra sweetness. I did add 1 carrot which I forgot to add in the ingredients shot.
- sweet potato - use for extra sweetness and goodness.
- sumac - a little sprinkle at the end - mmmm so good!
- add blue cheese - oh! Don't even think about not adding or trying some - the flavor is insane! Imagine some creamy blue cheese like Montagnolo affine, Castello creamy blue cheese, or Dolcellate. Oh la la!
- rosemary - instead of thyme but can be substituted for any desired dried or fresh herb that you like or have in hand.
- red chili flakes - don't hesitate if you like a little spicy kick.
- cherry tomatoes - you may substitute those with Passata (Passata di Pomodoro)
- goulash paste - use some paprika chili and tomato paste instead ( this is optional)
- vegetarian - this soup is vegan but you may add some dairy cream or stilton cheese if you want to take this to the next level ( see serving suggestions below).
- gluten-free - this soup is easily made as a gluten-free motion if you add gluten-free croutons or serve it with gluten-free bread.

Here is how to make this easy and healthy baked - made from scratch cherry tomato soup. See all the steps below:
1. Gather and prepare all the ingredients for this delicious tomato soup.
2. Place the cherry tomatoes, garlic, and red peppers into a lined baking tray.
3. Place the chopped onion in a pan and cook it until soft.
4. Soften the vegetables nicely, add some dried herbs.
5. Add tomato paste if you wish (I did it for extra flavor) and color - optional.
6. Take out of the oven the roasted cherry tomatoes, garlic, and red pepper.
7. Add the roasted tomatoes, peppers, and garlic to the sauteed onions.
8. Give it a good mix, stir, and allow to cook further until slightly reduced.
9. Once reduced, blend with a hand blender/mixer until you get the desired consistency. Reduce a little more.
10. There are many ways to serve this beautiful baked tomato soup like garlic croutons or and/ or with blue cheese.
📦Storage
You can store the leftover soup. You have to allow the soup to cool completely before transferring it to an airtight container. Store in the refrigerator for 3-4 days or freeze for later. It can be frozen for up to 3 months so feel free to make it in advance.

You may also use the cherry tomatoes and boil them rather than roasting them but you will not have the richness and depth in flavor the roasted tomatoes give to this beautiful and easy tomato soup with cherry tomatoes.

🫕Cherry Tomato Soup
Equipment
- 1 knife
- 1 chopping board
- baking tray
- parchment paper
- blender or hand mixer

Ingredients
- 1 kg cherry tomatoes (2.2 lb)
- 2-3 medium shallots (2 oz) use more if they are very small
- 1 litre vegetable stock (34 oz)
- 1 teaspoon Celtic salt
- 2½ medium red peppers or 3 small ones
- 10 leaves oregano fresh or dried
- 1 small parsnip
- ½ teaspoon black pepper freshly ground
- 2 tablespoons extra virgin olive oil (optional) I did use
- 1 large garlic head
Optional ingredients
- 1 tablespoon tomato paste I did add this
- 2 tablespoons heavy cream (optional) do drizzle over before serving
- 6 tablespoons small croutons optional
Instructions
- Gather and prepare your ingredients. Line an oven tray with parchment paper.
- Preheat the oven to 200℃ or 400℉.
- On the parchment-lined baking tray, add the washed cherry tomatoes, 2 red peppers cut into halves, sliced garlic, sprinkle some salt and pepper, and add a drizzle of olive oil. Bake for approximately 35 minutes, until the cherry tomatoes have burst and got a little color. Just like in the picture above.
- While the tomatoes are baking, take a pan out, place on fire, add a little drizzle of olive oil, add the chopped onions, and cook for 4-5 min stirring occasionally. Bring in the carrot, parsnip diced into small cubes, ½ of the red pepper, and herbs. Cook covered for 5 minutes.
- Add a tablespoon of tomato paste, homogenise it, cook for another 2 minutes and then add the vegetable stock.
- Bring in the roasted tomatoes (removed from the vine), pepper, and garlic, squeezed out of the peel. Cook for an extra 2-3 min.
- Mix it carefully to your desired consistency and cook for another 5-7 min to reduce it further if you wish for a nice color and flavor.
- Season and serve with the desired topping or as you like. See more ideas above. Enjoy!
